Posted on June 3, 2013 at 11:48 PM Comments comments (36)
Ingredients:
  • 2 cups organic canned pumpkin*
  • 1/4 cup packed organic brown sugar*
  • 3 eggs
  • 1/3 cup coconut oil* (melted) or olive oil
  • 1/2 cup water
  • 1/2 cup flax seeds*
  • 3 1/2 cups all-purpose flour
  • 3 1/2 cups whole wheat flour

* These items can be found in Port Angeles at Country Aire and in Sequim at Sunny Farms and Nash’s Farm Store.

Directions:

  1. Preheat oven to 350°F.
  2. Line three cookie sheets with parchment paper (not waxed paper).
  3. Mix together the pumpkin and the sugar. Stir in the eggs, oil and water until well blended.
  4. Add the flax seeds. Then mix in the flours. The dough will be fairly stiff.
  5. Roll out the dough to about 3/8" thick.
  6. Cut into desired shapes. You can go simple by using a pizza cutter or fancy and use cookie cutters in the shape of bones, etc.  Place treats on lined cookie sheets.
  7. Bake for about 40 minutes or until a light golden brown and fairly hard (they will harden a bit more when cooled).
  8. Set aside and allow to cool completely.
  9. Feed to your four-legged kids. As with all treats, feed in moderation.
  10. Store in an airtight container.
